You
won't believe that you only need three ingredients, yes and it includes water,
you just need some patience and time though.
Next time I’ll try to add 3 instead of 2
packages of unflavored gelatin and blend them with the mixer for a bit long
time to make the marshmallows firmer.
And these marshmallows are perfect for eat alone, with the hot coco or add some other ingredient to make something like peanut nougat.
Also the reason that I chose unsweetened cocoa powder as the coating instead of powdered sugar is to rid the extra sugar, or if you can use cornstarch, then you probably need to bake it before using it and again that will add some additional calories to it.
2 packages unflavored gelatin
1
cup cold water, divided
1
cup brown sugar
Unsweetened
cocoa powder
Place the gelatin into the bowl with 1/2 cup of the water.
In a saucepan combine the remaining 1/2 cup water and brown sugar over
medium high heat, cover and allow cooking.
Cook until boil for couple of minutes then immediately remove
from heat.
Set the mixer's speed to high. Whip until the mixture
becomes very thick and is lukewarm.
Lightly spray cocoa powder to a 13 by 9-inch baking
pan.
Pour the mixture into the prepared pan, using a lightly oiled
spatula for spreading evenly into the pan. Dust the top with enough of cocoa powder to lightly cover.
Allow the marshmallows to sit uncovered for at least 4 hours
and up to overnight.
Turn the marshmallows out onto a cutting board and cut into
1-inch squares using a pizza wheel dusted with the cocoa
powder. Once cut, lightly dust all sides of each
marshmallow with the cocoa powder.
