oatmeal bar

Baked Oatmeal Snack Bars

 
I just cannot not share this recipe with you, I found this one online and it use neither butter nor sugar and it’s very easy to do.  But it does have some sugar in the dried fruit like cranberries though, and you have choice not to use this one, for example use raisins instead.
One more thing is I use cholate chips instead of seeds for it. First I love cholate and the kids too also it’s on sale at this holiday season, I just cannot resist them. It also has some sugar and butter in it too. Next time I’ll surely add some seeds too.
I cook 4 batches at one time and cut the milk to 4 cups instead 5 otherwise, it comes out too moist. And I strongly recommend you use the pizza cutter to cut into pieces when it’s done, it comes out really nice bars.
Ingredients
·         1.5 cups rolled oats
·         1/2 cup chopped walnuts [or any nuts you like
·         1/2 cup dried fruit (any you like – raisins, cranberries, dates, figs)
·         1/4 cup seeds (any you like – sunflower, pumpkin, flax, sesame)
·         1 tsp cinnamon
·         1 tsp kosher salt
·         1.25 cups skim milk
·         1 egg
·         1 tsp vanilla
Method:
1.    Preheat oven to 350*
2.    Mix dry ingredients.
3.    Mix wet ingredients.
4.    Pour wet into dry. Stir to combine.
5.    Pour into a 9×9 baking dish either coated in cooking spray or lined with parchment.
6.    Bake for 40 minutes.
7.    Cut into 9 squares.

Mac & Cheese


In a large, heavy-bottomed saucepan, melt the butter over medium heat then sauté with as much as garlic as you like which I use a whole minced garlic bulb then diced onions then diced tomatoes until the onions are cook. Depend on the size of the onion and tomato; I use one small onion or half of a big and 2 medium of tomatoes.

Add a little wheat flour and whisk constantly until the mixture turns light brown in color, add milk then add whole lot of prefer kind of cheese, here I use more than one pound of them continue stir until almost all the cheese are melted. Remove from the heat.

And do forget to cook the mac while you are preparing the sauce, so you can have them done the same time. I use 12-14 ounces of it.

Mix the drain mac with the yummy cheese sauce well and make sure save some of the sauce to place them on the top of the mac, why? To make if really pretty when it out of the oven. Then put them into pre-heat oven at 350 °F until the top is golden brown. Which I never pre-heat the oven as the master chef said, ha-ha.

This is the TV show that I watched lately. At that time, they divide the interview into 2 parts; I watched the second part which starts with interviewing not the singing part. And later, I got chance to get online to watch the whole interview.
She’s an amazing singer, but when I watch by the second part first, I won’t think she has such a powerfully voice by her talking. She’s young, humble, humorous and truly honest person.

Parenthood is never easy. Every single one is individual and unique. Even between brothers and sisters, between twins, or even between your own five fingers, each and everyone have their own personalities and functions.

The other day our church has a youth parent meeting which is held periodically, so parents can know what’s going on their kids’ church lives. Who are the pastors, the advisors, what do they do every time when they are out of your sight.

And there’s a quite big issue about that one of the parent suddenly found out that her kids are getting out the worship meeting earlier without anyone to inform her and also her kids has some problems on getting along with other kids. Parents and advisors give their own opinions and thoughts and feedbacks and even provide some way trying to help.

Some of them are, “their kids also encountered the problems before”, and that’s how some other parents try to think of a way to help out.

There’s one advisor’s feedback really caught my attention, “you don’t switch your second priority with the first priority, otherwise, you’ll lose both of them in the end”, truly, the first priority is your relationship with our Lord. Yes! Peer pressures always play a crucial role on coming to church or not specially for young people. But it’s not all.

The advisors’ parents also speak out for their kids, “the manpower is not that much, they volunteer their time and energy and everything trying hard to take care of their younger brothers and sisters, and it’s tough”

“There’s something that we can do and there’s something that we cannot do and there’s something that we all cannot do, only our Lord can do.” This is the combination between son and father’s feedbacks, pretty touched.

But in my own opinion, parents play the most important roles on their own kids’ faith lives. They’re watching your faith lives. Show and show use any way that you really concern about their church lives by talk to them, encourage them to take part of the church activities, volunteer your time to help out on their events, listen to your kids voices. Here what I meant listen to your kids are not just by physically use your full ears to hear, also observe with your own eyes, ears and hearts too.

No one or nowhere will or is the babysitters for your own kids.

Wow! It’s been some time since last that I really get onto the word/blog for writing and just for writing something not for a specific purpose.

It is really a relief on that too.

I just cannot believe, it’s the holiday season again, think about it, it’s almost another year going to pass. Good thing is we can use words, photos, drawing, recording, videos or some other ways to save all the special moments, good or bad.

Do you or do I have a New Year resolution at the beginning of 2014?  Have they all accomplished? Actually we still have a little bit of more than a month of time to make efforts on that, right? So let’s seize on that precious time and do it.

oops i did it again

Yes! I did it again!

I feel really bad. I had another vomit due to the not so fresh food again. And this time my younger one also has some of the food. Good thing is he is ok.

Oh! Lord! Please help me learn the lesson. Be good with food storage, and don’t even risk taking it again even I have to waste a lot of the food. Especially this time my younger one has some too. And thanks again, I am ok and nothing happen to my younger.


Last night is truly terrible, the vomit, the worries for both myself and my son.

Around 11 years ago I was in big trouble; I lost my job, that’s the sole income for my family too. My kids are only one and seven years old. And my company was applying the green card for me at that time, all of the sudden, I became an illegal immigrant. I felt like there’s no way out of it. But Lord never forget about me, He reminds me it’s time to come back to Him, at that point I’ve away from church and Lord for some years. He told me, let’s hold hands together, face and solve the problems one by one.

easy? tough?


The other day my younger one seems very tired than usual, so he goes to sleep couple of hours than his daily schedule. I turn off the light, TV, computer and everything just be with him to make sure everything is ok with him.

And the same day my older one has late night class; he came home later than the routine. Oh! I just cannot help again to wait until he’s home then going to sleep myself.

Take care of your love ones are an easy or tough job? I know that I shouldn’t’ worry too much; I do pray a lot though.

Yes! There’s always a lot of things need to pray for.

This part of movie, it does bring back the memories of my feelings about the rain.

When I was under 7, 8 years old, I love when it’s raining. As soon as I spot the rainfall, I put on the raincoat, rain boots, sometimes with umbrella than rush to the nearby elementary school’s playground and play in the rain. I kick, jump, play, not dance but some moves just like in this particular movie scene.

Then when I was older, around junior height, height school age, oh! I just hate the raining. It’s wet and cold, especially for the school days, I have to carry the heavy backpack, wear raincoat and rain boot and umbrella too, to make ensure the backpack is fully cover too and walk to school. Once I get into to the class, take off all the rain gears, and found I was wet not from the rain but the sweat. I just can’t stand it.

As soon as I was in college, my feeling about rain changes dramatically. To the raining was so romantic, I could just lean on the windowsill and watching the rain, particularly when I saw the loving couples sharing with one umbrella, and both of them will try to protect their partner to get wet. It was a loving picture.

And when I get out of school and work, I guess I become reality, I understand that rain is very important. So, well, then rain, but please don’t during the day times, when I need to go out in the wet, night times is perfectly fine, all right? And now realize I was so selfish, people need to go out, work or school or some other reasons too, right?

As my age now, again, I’m not young but not that old. Typically, in California, drought is kind of serious, so I always say, please rain, anytime, day or night.

(And last night I did rain, and fortunately, it didn’t rain hard until the church event is almost over. thank God, the puppet show is successfully present and gathers up all their equipment way before it rain.)

You see here, exactly same person, me and all about the same feeling about the rain, but the whole totally different of impression about it. It’s all in your heart, you can chose being grumbling or joyfully.

So what in your wallet? Just kidding!
