香酥菠蘿吐司 pineapple toast

材料 ingredients
冷凍厚片土司 thick cut toast ………2 two
奶油 butter………50g (1/4 cup)
細砂糖 brown suger………50g (1/4 cup)
全蛋 egg ………20g (1)
高筋麵粉 flour………60g (1/2 cup)

準備工作 preparation
1. 烤箱以190 度預熱。Preheat the oven to 350 .
2. 奶油與蛋放置室溫退冰。Bring butter and egg to room temperature.

作法 how to
1. 奶油加細砂糖打發。Mix butter and sugar well.
2. 分次加入全蛋至攪拌均勻。Blend in egg.
3. 加入高筋麵粉拌勻。Lastly add in flour mix altogether smoothly.

4. 均勻抹至吐司上,劃出菱形紋路,放入烤箱上層以 190 度烤 8~10 分鐘至表面金黃即可。Spread the mixture onto the toast top, use spatula to make diamond pattern, bake at 350  for 8 -10 minutes or until golden brown.



不太成功,賣相不好,但還不錯吃。

Not so successful, tastes fine, not look quite right.

I used three regular toast instead and I had one whole egg was too much liquid for it, so the shape was not quite as it supposed to be.

egg cups



Shredded your favor cheese, small dice tri-colored bell peppers, prefer vegetable, cook the beacon and set aside.

Grease the muffin pan.

Preheat the oven to 350°F.

Wisk egg well and seasoned with salt and pepper, pour in muffin pan until 3/4 full adds in dice bell peppers, vegetable, beacon and cheese.

Bake for 25 minutes.

鹹雞蛋 salted egg

6-2-2017, first time to try to make salted eggs. 第一次試作鹹雞蛋。
雞蛋放在白酒中逐個浸蘸一下,再滾上精鹽,放入容器內,約22天即成。

I didn't wash the eggs as the suggestion from others. 

Instead, I kind of using the white rice wine to wash and rinse them then covered the eggs with fine Himalayan salt and then wrap them up with plastic wrap, store in an airy dark cool for 22 days.

It tastes good; also I find it interesting that that actually tastes very different from when you cook fresh eggs with salt.

For the first, I’m not sure that I’ll success, so I only tried three first, next time I should try more at a time.


I wonder that is the reason why Prosciutto and Bacon taste good, the salts, or the other seasonings, spices or herbs infused in the food evenly.

tea eggs

First time made this for the fellowship's potluck, that's why I made so many at one time. It tastes good, especially when consume it while warm, according to my son.

And the reason why I use the mountain tea, is, I happen to have some at home, normally, people use black tea. 

For best results, the eggs should be allowed to steep for several hours or longer. The dark color of the spiced tea gives the egg a marbled effect when it is peeled.


Ingredients
3 dozens of eggs
8 tablespoons mountain tea
3/4 cup soy sauce
1 whole lemon peel, 4 cinnamon stick
Salt, green onion, ginger, sugar
Water

Directions
Place eggs gently in a large pot and add water to cover. Bring to boil. Remove from heat, cover and let sit 20 minutes. Drain eggs and let cool.

Using the back of a spoon, crack each eggshell all around. The cracks allow the flavor to penetrate, so make sure each eggshell is well and deeply cracked all over.


In another pot prepare the Marinade, place cracked eggs in, ideally keeping in a single layer, and make sure all the eggs is covered. Bring to boil. Turn heat to low and simmer for an hour. Leave eggs in the Marinade for hours until all cool down, Refrigerate at least another day before consume.

Sun above the clouds, 雲上太陽



Fun to make and eat this sun above the clouds. If you wish a well done egg yolk like me, then you probably need to turn over the egg yolk at the half baking time otherwise the clouds may be burned.

And here's what I found from the web about eating egg raw or well done?

Raw eggs do have all the same benefits as cooked eggs. However, protein absorption is lower from raw eggs, and the uptake of biotin may be prevented. Most concerning is the small risk of raw eggs contaminated with bacteria leading to Salmonella infection. Buying pasteurized eggs will lower your risk of infection.
