Mind reading machine
I need a mind reading machine that can also write down exactly everything that I want to write for my blog.
Sometimes I don't have time to write, a lot of time, I am either too tired to write or not in the mood of writing.

蘿蔔糕 (菜頭粿/好彩頭)Radish Cake
1 pound rice flour
3 c water
3 pound shredded radish
6 oz dried squid ( finely diced)
ground white pepper
salt
You won't believe how easy is to make this dish, beside water and flavoring, you only need 3 ingredients.
I didn't purposely pick the dried squid as one of the ingredients. The other day I happened to buy one pack of dried squid and not knowing what should I do with it. Then it came the Chinese new year day, so I thought why don't I use it for the radish cake!? It came out really good. Make sure to wash the dried squid and then soak them in the water for at least one day prior of using it.
Stir fry the squid and radish with salt and ground white pepper until it's fully cooked, while cooking you can mix the rice flour and water smoothly in a bowl. When the radish is cooked, pour in with the flour and water mixture, mix them together really well.
Transfer the mixture into a lightly greased inner pot, add 2 cups of water in the outer pot, steam with Tatung Multi Cooker and Steamer, when done, insert a chopstick into the cake. If it comes out clean, then it is ready.
You can either eat the radish cake warm right after it's cooked or pan fry it.
If you are going to pan fry it, then you have to leave it until completely cool (best overnight in the refrigerator), so that the radish cake will firm up. For it will be easier to cut it, as it will not stick to the knife when you cut them into thin slices.

Three Little Lobsters (with garlic butter)
Unlike the three little pigs, this three little lobsters were all eaten at Lunar New Year Eve.
I first steam the lobsters, while it's cooking, prepare the garlic butter. When the lobsters were done, cut the lobster down the middle, spread the garlic butter evenly on them then bake them.
Make sure you save the juice from steaming the lobster and or save shells after done eating boil them all together, they the best base for cooking noodles.

Greens from Alice’s Garden, can you tell how many there are?
5 different greens (leek, Scallion, celery, leaf lettuce, Madeira vine).
Alice’s Pull-Apart Bread
First time to try it, love it!
Made with 5 different greens( leek, Scallion, celery, leaf lettuce, Madeira vine ) from our backyard, 2 bulb garlic, sharp cheddar cheese, butter and grape seed oil.
Cut the bread on a diagonal into 1" diamonds and make sure not to cut all the way through the bread.
Stuff all the mixtures in between the bread evenly and then use the middle oven rack to bake at 350°F until the cheese melts and the bread is a bit brownish.
Tips:
1. Cut the cheese first, if you use the block cheese and you plan to cut all the ingredients using the same knife. Cut the garlic the second, then the greens and the bread the last. By doing this particular order, you will find the knife is so clean when you finish all the cutting.
2. Use any kind of oil that you prefer to stir fry the finely minced garlic until its start to brown, add in all the greens continue to cook until all done, turn off the fire adding in the butter, stir all together until mix smooth.

Fish Curry Bread Super Bowl
Just in for the Super Bowl LLI.
I got plenty of vegetables in it; celery, red onion, tomato, carrot along with fish and DIY curry powder.
For curry powder, I have almost all the spices that I have on hand; turmeric powder, paprika powder, ground cumin, ground ginger, ground mustard seed, ground black pepper, and salt.
Next time I will add ground cinnamon to it.
1. Fully cook all the vegetables and fish with curry sauce.
2. Cut a slice off the top of the bread, hollow out and leaving 1/4 inch thick shell (save removed bread and bake with cheese). Fill with fish curry and cheese cubes, leave the bread cap off and use the middle oven rack to bake them together at 350°F.

Preferably use a knife to remove the inside bread off, so you can also bake them with cheese on top, as a way to tell the bowl is done by seeing the cheese is melted.
