Brownie

1 C coconut flour 
1 C wheat flour
3/4 C brown sugar
1 C cocoa powder
1/2 t baking powder
1C crushed walnut
3 eggs
1/2 C butter
1/2 C heavy whip cream (feel free to add more if the mixture is too dry and make sure it's not liquid either)

Combined well all the dry ingredients, then mix all the other ingredients together.

Pour in 9 by 13 bake pan, press it firmly.
Bake at 350 °F for 30 minutes or until a toothpick comes out clean. Cool completely before cutting.

Oreos


I made 2 batches at one time, and am surprised about how much coco powder that I needed for this recipe.

In this one time baking, I used all my leftover coco powder, flour and the butter is almost gone too.

When I trying to make the filling, I nearly give up, first I used a hand mixer. And I need to beat the brownish sugar and yellowish butter together until it's fluffy and white as snow. I made it!

Cookie:
1 1/2 c butter
2 c brown sugar
2 t salt
4 eggs
4 c wheat flour
2 1/2 c coco powder
1 t baking soda
Bake at 325 ºF for15 minutes

Fillings:
1/2 c butter

3/4 c brown sugar

Adventure Chocolate Chip Cookies!


Warning! Don't Try This at Home! Just kidding! It’s nothing life threatening.
Why do I name my cookies, Adventure Chocolate Chip Cookies?
Adventure = fun + risks, right?
This is the very first time that I try to bake without measure the ingredients except the leavening agent, baking powder and baking soda and the eggs, which are countable, unless you use the liquid eggs.
With this I make about 3-4 dozen cookies, yeah, I don’t count them. Here’re the ingredients. And please note that inside the parentheses, are just the estimate amount that I used. Wheat flour ( 6-7 c), ground cinnamon (2 t ), 4 t baking powder, 2 t baking soda, coconut sugar ( 1 c ), avocado oil ( ½ c ), 2 eggs, chocolate chips ( 2 c ).
Preheat the oven to 350°F.
In a large bowl, whisk together all the dry ingredients well and then together with the eggs and avocado oil until smooth. Knead the dough into rolls, and then cut them into the thickness that you prefer, ¼ inch, I’ll say, not too thick, it’ll raise and expand when baked.
Leave about half inch between the cookies dough.  Bake until a chopstick insert into the center of one of the cookies comes out clean. Cool the cookies before serve.
This time, I use 2 new ingredients; coconut sugar and avocado oil for my, and cookie taste pretty good to me.
However, I don’t really suggest you to do so like me, not the ingredients but the way that I hardly measure the ingredients. Again, an adventure accomplishes, fun and truly risky at the same time. Yeah, what if the cookies come out bad, but worthy to try, I mean for me, I’ll say.

No-Bake Strawberry Cheesecake


Ingredients
1 pounds fresh strawberries, washed, dried
2 packages (8 ounces) Cream Cheese, room temperature
1 T honey

Instructions
In your mixer's bowl, beat together the cream cheese, honey and strawberries until well blended and smooth.
Arrange strawberries over the top.
Refrigerate for at least four hours, overnight is best before serve.

Buttermilk bread & pound cake, can you tell which one is which?


For the efficiency, I hardly bake only food at a time, sometimes 2 or 3 or more.

The past weekend, I bought the wrong dairy, buttermilk, therefore, I have to use it and found a lot of yummy receipts so I try 2 so far.

I’m supposed to get half and half, these 2 products display side by side, same brand, same color, same design, well products’ name are different, but I’m kind of in a hurry, so this is what happen.

Sometimes, mistakes make something interesting and new. Things always turn around before you can notice it, cherish your life.

It tastes good, next time for the pound cake, I’ll have oatmeal and walnuts add into it. I’m sure, it tastes even better and healthier.

 Basic Buttermilk Quick Bread Makes one loaf
 2 cups all-purpose wheat flour
 1/2 cup brown sugar
 1 1/2 teaspoons baking powder
 1/2 teaspoon baking soda
 1 cup buttermilk
 1 large egg
 1/4 cup unsalted butter, olive oil, or vegetable oil
 Heat the oven to 350°F. Grease a standard 9 x 5 loaf pan.
 Whisk together the flour, sugar, baking powder, and baking soda in a medium mixing bowl.  Melt the butter, if using. Whisk it in a separate bowl with the buttermilk and the egg.
 Pour the liquid ingredients over the dry ingredients. Gently stir and fold the ingredients until  all the flour has been incorporated and a shaggy, wet batter is formed. 
 Scrape the batter into the prepared pan and pat it into the corners. Bake for 45-50 minutes.  Let the loaf cool in the pan for 15 minutes before removing and slicing.

 Buttermilk Pound Cakes
 3 cups all-purpose wheat flour
 1/4 teaspoon baking soda
 1/2 cup butter
  2 cups brown sugar
  6 eggs
  1 cup buttermilk
 Preheat oven to 325 °F. Grease one 9 or 10 inch tube pan. Mix together the flour, baking      soda, and salt. Set aside.
 In a large bowl, beat butter with sugar. Mix in the eggs, one at time, and beating well   after  each addition.  Gently mix in flour mixture alternately with the buttermilk. Pour batter into    the prepared pan.
 Bake for 90 minutes. Do not open oven door until after one hour. When cake begins to pull   away from the side of the pan it is done. Let cool in pan for 10 minutes, then turn out onto a  wire rack and cool completely.

Cup-cookies, yes it’s not a typo, I use the cupcake pans to bake the cookie, and the cookie dough that are store buy. To make sure that I can a perfect shape cookies for bake sale, but I should cut the dough into 2 next try, it seems too thick for a cookie.

rice pudding 2


Rice pudding, no doubt about, there will be rice, milk powder, sugar, raises, egg and cinnamon.

Once again, I enjoy doing my own kind of cooking. Therefore, I won't be able to give you the exact amount of my ingredients, but make sure it has to be creamy, tastes and smells milky and not too sweet though.

I don't remember since when I never buy the regular rice but brown rice.

And I add the raises right before I eat it warm instead of cooking with and a little bit if milk adds on, if you wish.

Baked Rice Pudding 1


This is a dessert that I long to make, rice pudding.

1 cup cooked brown rice (I add a little bit more of it to make it solider.)
2 1/2 cups milk
3 large eggs, beaten
1/2 cup sugar
3/4 cup raisins (I use red bean paste this time for that I happen to have some at hand.)
1 teaspoon vanilla extract (I didn’t usually use it.)
1/4 teaspoon salt (I didn’t usually use it.)
1/2 teaspoon ground cinnamon (It makes the pudding smells good)
1/4 teaspoon ground nutmeg (I hardly use this, maybe I should try some other time.)

oatmeal bar

Baked Oatmeal Snack Bars

 
I just cannot not share this recipe with you, I found this one online and it use neither butter nor sugar and it’s very easy to do.  But it does have some sugar in the dried fruit like cranberries though, and you have choice not to use this one, for example use raisins instead.
One more thing is I use cholate chips instead of seeds for it. First I love cholate and the kids too also it’s on sale at this holiday season, I just cannot resist them. It also has some sugar and butter in it too. Next time I’ll surely add some seeds too.
I cook 4 batches at one time and cut the milk to 4 cups instead 5 otherwise, it comes out too moist. And I strongly recommend you use the pizza cutter to cut into pieces when it’s done, it comes out really nice bars.
Ingredients
·         1.5 cups rolled oats
·         1/2 cup chopped walnuts [or any nuts you like
·         1/2 cup dried fruit (any you like – raisins, cranberries, dates, figs)
·         1/4 cup seeds (any you like – sunflower, pumpkin, flax, sesame)
·         1 tsp cinnamon
·         1 tsp kosher salt
·         1.25 cups skim milk
·         1 egg
·         1 tsp vanilla
Method:
1.    Preheat oven to 350*
2.    Mix dry ingredients.
3.    Mix wet ingredients.
4.    Pour wet into dry. Stir to combine.
5.    Pour into a 9×9 baking dish either coated in cooking spray or lined with parchment.
6.    Bake for 40 minutes.
7.    Cut into 9 squares.

brownie, tomato eggs, onion eggs

Brownie, tomato eggs, onion eggs, those are the food that I’m so enjoy lately. They are all homemade by my kids. Yum! Yum!

Although the brownie, they use the ready to use brownie powders but with all the love and anticipation, it makes them a lot fonder.

Also for the brownie, they accidentally set the temperature too high at the first, 375°F instead of 325°F as the manual says. Surprisingly that makes the brownie, crispy outside and moist inside.

I just cannot wait to go home and eat more. Oh! Yes! Not too much!

homemade Sweetened Condensed Milk

I found this from Google search, I cannot wait to try it, and it looks so easy. Hurray! And can be one the ingredient for some other recipes.

Ingredients:

·                        1 cup instant nonfat dry milk
·                        2/3 cup granulated sugar
·                        1/3-1/2 cup boiling water
·                        1/4 cup (2 oz) melted butter

Preparation:

1. Place the dry milk, granulated sugar, 1/3 cup of the boiling water, and the melted butter in a blender.
2. Blend all ingredients together until they are smooth, scraping down the sides of the blender occasionally to get all the dry ingredients incorporated.
3. Condensed milk typically has a thick, syrupy consistency, but if your homemade condensed milk is too thick to pour easily, add another spoonful or two of boiling water and blend to incorporate. Adjust the water until you are happy with the consistency.
4. Use your homemade sweetened condensed milk right away, or store it in an airtight container in the refrigerator for up to 5 days. It will get thicker when it is refrigerated, but will loosen up when stirred and brought to room temperature.

It makes around 1 can, 12-16 oz. of it. It’s ready to make some yummy treats out of it.
It tastes really delightful. You can add coco powder water to make coco drink, cold or hot.
And it's a new way to use milk powder.
But next time I’ll not to use the butter for it.

fry bananas

This is the first time that I try it.
I enjoy try new stuff, new food to eat, new way to cook or new route to go. And it is always good to our brain too.

The ingredients for the banana coating are wheat flour, shredded coconut, and sugar and of course you need water.
You also can have one or some milk powder or milk for the coating.

Then fry them, it tastes good to me.
