Baked Yogurt-Mustard Chex Chicken Fingers

Ingredients:
Chicken Breast 11/2 lbs. (cut into strips)
Corn Chex Cereal 6 C
Yellow Mustard 1/2 C
Plain Yogurt 1/2 C

Preheat oven to 350°F. Crush cereal in a bag using a rolling pin. Place cereal in a container. In another container, stir together Yellow Mustard and Plain Yogurt. Dip chicken strips in the mixture, then in crushed cereal to coat evenly; place on cookie sheets, spacing chicken evenly apart. Bake about 25 minutes or until chicken is no longer pink in center and coating is crisp. Remove from oven; cool slightly before serving.

Seasoned Bake Sweet Potatoes


Yes, this can be either snack or dessert.

It is simple and healthy, easy as 1-2-3-4-5-6-7; buy it, wash it, cut it, season it, bake it and then eat it. Wait, here is the 7th, love it.

The seasonings that I used are, coarse sea salt, hand grind pepper, paprika and avocado oil, how much to use? Just enough to taste.

Anyone has question about how to cut those nice sweet potatoes while it’s still raw and hard; without cutting through the whole piece of it and evenly, well, almost, ha? Wait for it, here's the fun part about cutting.

First, of course, make sure you have a sharp knife, and if you are really good at cutting then feel free to cut it without any aid tool. Otherwise, you can use either 2 of the chopsticks or 2 piece of small cutting boards and have them on each side of the sweet potato and cut it, here, I prefer the small cutting boards, steadier.

I normally set the oven's temperature to 350°F for baking and bake until you can smell the good aroma of that food then it's done.

taro, sweet potatoes or yam, purple yam small rice balls


芋圓、地瓜圓、雙色地瓜圓 
Ingredients:
去皮後的芋頭、地瓜、紫地瓜  
Peeled taro, sweet potatoes or yam, purple yam, cooked and mashed 100g
樹薯粉 Tapioca flour  30g
滾水.....依情況決定加入 hot water amount vary

Try to use different kind of ingredients to make a colorful snacks.

I only made the ones with sweet potatoes, got tired and I’m glad that I decided so. Not because it doesn't turn out good but the kids won't buy it, it ends up I finish them all, all by myself in sweet barley soup for days. It tastes good and bouncy.


And I didn't use any water, the water in the sweet potatoes is good enough for making into balls with tapioca flour.

Candied Walnuts

Ingredients

  • 1 pound walnut halves
  • 1 cup brown sugar
  • 2 teaspoons ground cinnamon
6 tablespoons milk

Directions

Preheat oven to 350ºF. Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes.

Stir together sugar, cinnamon, and milk in a medium saucepan. Cook over medium-high heat for 8 minutes. 

Add walnuts to sugar syrup, and stir to coat well. Spoon nuts onto waxed paper, and immediately separate nuts with a fork. Cool, and store in airtight containers.

Eggplant Pizza Rounds

Directions:
1.    Slice eggplant and lay on top of a clean dish towel – sprinkle with salt and allow to sit on the counter for 20-30 minutes or until the liquid has been drawn out.
2.    Preheat oven to 425 º F
3.    Place a wire rack on top of a rimmed baking sheet and place eggplant on top. Lightly brush olive oil over the top of each eggplant and season with oregano, garlic powder and pepper.
4.    Bake slices for 15 minutes, then flip and bake for another 10-15 minutes on the opposite side or until tender.
5.    Top each eggplant with a dollop of tomato sauce, a sprinkle of Parmesan cheese, and some shredded mozzarella cheese. Bake for another 10-15 minutes or until the cheese has melted.  Enjoy
