Banana Ice Cream!


You scream, I scream, we all scream for ice cream!


Homemade Banana Ice Cream without sugar, only two ingredients; bananas plus Half and Half.

First I freeze both ingredients separately around 4-5 hours, then blend them all together and then spread the mixtures into a glass baking pan evenly, freeze again for 6 hours.


Naturally delicious, serve and enjoy it!

Next time I’ll try different kind of fruit, or maybe add some nuts or chocolates and add some lemon to prevent browning.

Slush

An easy and healthy way to cool down for this hot summer; slush! 

Have as many as frozen fruits ready to blend them into slush; from mangoes, bananas, blueberries, strawberries, grapes, cherries (pit them after frozen, to reduce juice lose), lemon juice ( this one can just use a fresh squeeze juice) and so on.

I always have one whole lemon juice in each cup, give it a tastes of sour, if you cannot stand any sour, then add a bit of honey to it. Vitamin c is one of the way on preventing browning.

Have fun and be creative to mix different color of fruits, you'll be amazed by all the vivid natural colors that you can get. 

I tend to buy bulk on fruits whenever it’s on sale, freeze them, one of the way to extend fruits’ self-life.

Also, thaw the frozen fruits a bit and add some water before blend them into slush; don’t defrost it for too long or add too much water to it, otherwise, it’ll become too watery like juice.

Summer Berry & Cherry Crisp


In one bowl have blackberry, pitted cherry, brown sugar, coconut flour, lemon juice, and lemon zest, mix them well.

In another bowl have wheat flour, brown sugar, oats, salt, and small cubed butter, well-blended; crisp toppings.

Have some berry mixtures in the bottom of the pie plate, then top with the crisp toppings and then bake at 350°F for 30 minutes or until its light golden brown.

I like to top with a scoop of ice cream and eat it while it still warm.

Also depends on how sweet you like, I only add little sugar.

Memorial Day 2017

Bottom: banana ice cream.
Second layer: blackberry ice cream.
Top with: strawberry ice cream.
All with some lemon juice to prevent browning and to add some flavor and not to taste too sweet.

It’s not until someone reminds me that I also have a matching color of red, blue and white for this Memorial Day.

mixed fresh fruits


Mixed fresh fruits 水果總匯 = 1 pineapples + 1 pear + 1 banana + 3 oranges

That is the desert that I brought last Friday for fellowship gathering. To tell you the true, I totally forgot about it until the last minute, so I grab any fruits that I can have at hand. Thanks God, that day after work, I went grocery shopping, for my refrigerator is almost out of food.


Actually, I was struggle about the shopping because first it’s getting dark, and I’m tired and hungry, but I don’t really want to do the shopping during weekend for its always crowded, so there I go and it saves my night. Ha! Ha!

bake apple

Oh! No! It looks easy and yummy, one more recipe that I have to try hard to find time to try it myself.

Baked Bloomin’ Apples

Ingredients:
– 2 Apples (I love Honeycrisp’s)
– 4 Caramels
– 1 TSP Cinamon
– 3 TBS Brown Sugar
– 2 TBS Butter
– 1 TBS Flour
Instructions:
1. Preheat oven to 375 degrees.
2. Cut off the top 1/4 of an apple
3. With a melon baller or spoon scoop out the center/seeds but DO NOT grow through the whole apple like you would with an apple corer.
4. With a small paring knife make two deep circular cuts around the center apple. Next flip the apple over and cut slits through the side to the center, and repeat these cuts around the entire apple.
5. Put apples in a baking safe dish or pan. Place 2 caramels in the cavity of each apple.
6. Heat butter and brown sugar in the microwave for 30 second, stir and pop back in microwave for an extra 15 seconds. Remove from microwave and add in flour and cinnamon.
7. Bake in oven at 375 degrees for 25-30 minutes. If apples still feel hard try baking for additional 5-15 mins.
8. Remove apples from oven and place on plate or bowl. I love to pair this with Vanilla ice cream.

frozen grapes & other fruits


I try to freeze the grapes, eat it directly and it tastes delicious. It’s a fun way to have fruits as desert.

Also freeze the bananas and strawberries then blend with some milk, it tastes just like ice cream. I love it. And remember take out the frozen fruits out of the freezer around 20 minutes before you blend them.
