The other day, I got a email from our church's children's ministry, says that they need the donation of brown paper shopping bags for VBS (Vacation Bible School). I happen to have some, so, I went to see the children's ministry's director to make sure I have the right bags that they need and how many they need? The answer is, yes and 100. I know that I do have plenty, but 100, trust me, at that moment, my eyes don't like a Chinese, yes, my eyes are on stalks.

And guess what, I just finished sorting out all the bags that I have, a little more than we need. 

Actually, when I first gather all the bags that I thought I have, it's eighty something, feeling sort of discouraged, why not one hundred? I went to do something else, and minutes later, surprisingly, I spot a small pile of different kind of bags, some bags are we need among those. That's how the one hundred something came up at the end.

Those were the options that I can have for this morning, there’s no priority or anything, but all in the morning, meaning, I can only pick one.

The final answer is, I went to the sister fellowship meeting, I ended up went with this one, due to the timing.

Candied Walnuts

Ingredients

• 1 pound walnut halves
• 1 cup brown sugar
• 2 teaspoons ground cinnamon

6 tablespoons milk

Directions

Preheat oven to 350ºF. Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes.

Stir together sugar, cinnamon, and milk in a medium saucepan. Cook over medium-high heat for 8 minutes. 

Add walnuts to sugar syrup, and stir to coat well. Spoon nuts onto waxed paper, and immediately separate nuts with a fork. Cool, and store in airtight containers.

Knowing kids are away from electronics, we all with friends, young and old, most of all, with God.

Fellowship with brothers and sisters, praising, singing, praying, talking, sharing, complaining, oh! Yes, sometimes and eating together.

I remember there's a video, the interviewer ask separately, between parents and kids, if there's a chance that you can eat with anyone in the world, who that will be?

All parents think about someone well-known or celebrity. And when the kids are interviewed, their parents are watching in shocked and tears, their kids' answer is, their own parents, solid and sole answer.

we all change in some way, when we grow up, impacts in our lives, struggles to solve, pressures to dealing with, our heart goes to directions, not vitae anymore, well, most of the time, most of us.

What’s the word that you love the most? To me, free, ha!

Free is good, but not always though.

When I see from the web, free Frisbee again, I just can help myself, I sign up again.

I know that just a marketing trap, immediately, I got emails and phone calls, for marketing purpose.

You can call me stupid, silly, dumb, idiotic, foolish, OR whatever you think.

And that’s why, the first English word that my older son learned, is, FREE, ha-ha!

Still remember that when I first came to U.S.A. I saw the store ad says, buy one get one FREE. I rush to the store, huh, the only word that came into my mind is, FREE.

Hey! If that’s for an English learning purpose, then this will be a good and free way to. Don’t let anyone know that I tell you this.

蔥油餅 Chinese Scallion Pancakes

Proudly presents, 蔥油餅 Chinese Scallion Pancakes and Egg Noodles.

What? The recipes!?

For the蔥油餅 Chinese Scallion Pancakes, scallion, olive oil, salt, and wheat flour, and water. Warm water is strongly recommend, the dough will be softer to taste and kneading.

Egg Noodles, egg, wheat flour and water, what else it can be.

I don’t have a fix amount for each of the ingredients. However, for Chinese scallion pancakes, add water little by little into the flour, using chip stick to mix, you don’t want too much wet dough stick onto to your hands before it forms a perfect dough. When you see the mixture of flour and water starts to form then it’s time use your hands to kneading them.

The dough making process for the egg noodles are similar to the Chinese scallion pancakes, only here we have eggs, I always make small portion, for this measure of noodles I have 3 eggs. And I have the eggs mix with the flour first, then to see if we still need any more water to add in. For noodles, we need more flour when it form into a nice dough and when we roll it into thin layer and cut them into strips, make sure it doesn’t stick together before cook.

I like the color of the egg noodles, golden, next time, I must try out different ingredients for it’ll be a different color, like spinach for green, carrots for red and so on.

And both before using the dough to make into end products, let the dough stands for 20 minutes or so. For this is the experience for others, I don’t really follow it.

stay home mom

Have you ever try to be like someone else?

Like try to be like a stay home mom, not a working mom, don’t need to worry about to meet the ends need mom for a day.

Stay home and go shopping around during the regular working hour.

I always want to buy something for myself, but most of the time I come out of the store with empty hands. Why? Can’t find anything I want or need or sometimes, the other way around, duh! The price!

No one can be cheerful 7/24, there’s no such thing as an easy life. Even babies, worry about, will their parents forget about them or feed them and the like.

I do have my personal counselor 7/24 and it’s free of charge, our mighty God.

reclaim your brain

bacon breakfast pie

Ingredients

4 Eggs, pepper, 2 c milk, 2 c shredded cheese, 2 c cooked diced potatoes, bacon, and pie crust ( I have my own homemade version, please see below for the recipe.)

Directions

 Preheat the oven to 350ºF.

Pour the egg mixture into the pie pan (I use rectangular baking pan). Bake for 35-40 minutes or until the quiche is firm enough to lay the bacon on. Remove the pie and increase the temperature to 450ºF.

 Weave the bacon into a lattice on top of the pie. I didn't follow this part, just lazily lay the  bacon on it, the result is not very good, next time, I'll cut them into small pieces instead. Also  reduce the amount of the bacon, this recipe is already kind of heavy.

I didn't have the pie crust hanging over the rim, therefore, I don't even need to worry about the following. Cover the edges of the pie with aluminum foil to prevent burning. 

Return the pie to the oven and bake for 10-15 minutes or until the bacon is done. And you need to worry about this part too, tip pie dish carefully to drain any bacon grease, just use less bacon will do.

The most important and fun part is when to serve/eat the pie? While it's still warm, not hot, otherwise, it'll too soft to cut into nice pieces.

Butter Flaky Pie Crust

Ingredients

1 1/4 c wheat flour

1/4 c butter, diced

1/4 c water

Directions

In a large bowl, combine flour and water. Cut in butter until mixture resembles coarse crumbs. Then forms into a ball. Wrap in plastic and refrigerate for 4 hours or overnight.

Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie pan.

If pre-baking, use a fork and lightly prick the bottom and sides of the pie dough. Then preheat the oven to 425ºF and bake the pie crust for about 8 minutes. 
For this step, since, we need to bake this pie for sort of long time, so I didn't pre-bake it, it comes out good, as you can see, both look and taste.

remove booger vs. blow your nose

Feeling such a relief that after months of suffering from my sensitive Bronchus, finally I get to remove the boogers from my nose instead of blow the mucus.

Sorry about describing this kind of disgusting scene to you guys, but I bet that you can never image how terrible is that I felt about that sort of endure, do you?

And that’s how people puzzle about, you pray, even when you go to bathroom!? Yes! There’re people won’t be able to do that by their own force or have hard to do so.

Chicken Enchiladas

Ingredients
3 tablespoons vegetable oil
1 1/2 pounds skinless boneless chicken breast ( chicken tender)
Salt and pepper
2 teaspoons garlic powder
1 red onion, chopped
2 cloves garlic, minced
1 cup frozen corn, thawed
16 corn tortillas
1 cup shredded Cheddar and Jack cheeses

Directions
Coat large Sauté pan with oil. Season chicken with salt and pepper. Brown chicken over medium heat, allow 7 minutes each side or until no longer pink. Sprinkle chicken with cumin, and garlic powder.

Sauté onion and garlic in chicken drippings until tender. Add corn, stir well to combine.

Coat the tortillas with pasta sauce, this softens them and makes them more pliable. Spoon chicken mixture in each tortilla. Fold over filling, enchiladas in pan with seam side down. Top with remaining pasta sauce and plenty of cheese.

Bake for 15 minutes in a preheated 350 degree F oven until cheese melts.

Oatmeal Whole Wheat Quick Bread

This is a 4 batches load of bread

Ingredients

     1 cup rolled oats

     1 cup whole wheat flour

2 teaspoons baking powder

     1 1/2 tablespoons honey

     1 tablespoon vegetable oil

     1 cup milk

Directions

Preheat oven to 450 °F.

In a large bowl, combine oatmeal, flour, and baking powder. In a separate bowl, dissolve honey in vegetable oil then stir in the milk. Combine both mixtures and stir until a soft dough is formed. Place on a lightly oiled baking pan.

Bake in preheated oven for about 20 minutes, or until bottom of loaf sounds hollow when tapped.

negative mood

I know negative moods or thoughts are not healthy. But I just have to write them out loud, otherwise, I feel like I cannot breathe or do anything.

There’s time that I thought, I have to encourage others, for example, come back to regular church life.

Trying all my best, encourage, giving suggestions, and of course, be a good listener, listening to them, try to find out the reason why, when, what does this happen, guess what come into my mind in the end of the conversation. I only keep them inside my mind of course.

Sadly to learn from our weekly church bulletin that one loving teacher die days ago. She was in charge of the worshiping for 4-6 years old every Sunday from 10-11:00 am, and I was her assistant. 

Only work with her for couples of months, but have strong impressions of her. A sweet mom of a pair of beautiful and handsome twins, a dear wife, a caring daughter, a dedicated teacher, a sincere friend, I learn so much from her, everything.

I know we have no control of anything, the same question came up to me every time, why she or he, why now, this soon?

Ezekiel 31 - 34

"That you ( they, he) may know that I am the LORD" is a phrase that occurs 50, 63, 66 or 74 times in the book of Ezekiel. "I will", 77 times. “The word of the Lord came” (50 times), and “glory of the Lord” (10 times). 他被稱為「人子」達90多次。新约聖經裏，耶穌也同樣被稱為“人子”差不多達80次。
In here the numbers that particular phase appears in Ezekiel is not the issue that should argue about, the point is the meaning that our Lord wants us to learn.

Yes, it's raining now, but don't get me wrong this time, I am indoors , not even planning to go out.

Yesterday, I talked to one of  the coworker about the weather lately, it's like everywhere, being weird.

Chat about our weather here, 90s, today and then drop to 70s tomorrow suddenly. And I add, "tomorrow gonna rain". 

Moments later, I heard, coworkers said, "oh, it won't rain tomorrow...etc."

There it rains now, and a bit harder than when I begin writing this blog.

Last Sunday, 2 of our fellowship's kids got baptized. One of the kids' father sharing how joyful is his heart for her daughter, and was wishing his son will be baptized soon. And then there's a sister ask him, is that more joy than he gets an A on his report card. Without any hesitation, he answered, of course. For the grade, the happy may last the day, then gone tomorrow. Knowing your kid has a lifetime faith, yes, that's a lifetime thing.
